Paleo Spiced Carrot Cake

Like promised, here is more about the cake my Mom made for Easter! We used the recipe from Simple Roots Wellness. Super yummy! We chose this recipe to use because it is Paleo, but not loaded down with all different kinds of alternative flours. Just coconut flour and tapioca starch!

IMG_5379Here is the recipe from Simple Roots Wellness that we used:

  • ½ cup coconut flour
  • 1½ cup tapioca starch
  • 2 T cinnamon
  • 3 tsp ginger
  • 2 tsp allspice
  • 1 tsp salt
  • 2 pinches of cloves
  • 2 tsp baking powder
  • 1 cup butter
  • 8 eggs
  • 1 cup applesauce
  • 1 cup coconut sugar
  • 2 tsp vanilla
  • 4 cups shredded carrots


  • 10 ounces goat cheese
  • 2 tsp vanilla
  • 2-4 Tbsp almond milk or coconut milk
  • ¼ cup softened butter
  • 2 Tbsp honey
  • 2 Tbsp maple syrup

This cake was the perfect to end our Easter feast. Guilt free deliciousness! Pretty sure I could’ve eaten like five slices (not recommended), but I restrained. Her cake has four layers and it’s not frosted on the sides, but we made ours three layers and we frosted the sides.

Although we adored this recipe, Taylor, my Mom, and I concluded that next time we make this, we’re going to add more carrots, switch out the applesauce for unsweetened canned pineapple, and instead of doing all goat cheese for the frosting, doing half and half of goat cheese and cream cheese. Just preference things, but still scrumptious as is! Just have to figure out what’s right for your taste buds. Also, instead of using almond milk, or coconut milk, we used the fresh whole milk we had on hand from a local dairy in Claremore, OK: Swan Bros Dairy.

IMG_5390 Along side this beautiful piece of cake is an extremely tiny fork. It’s precious. One of my favorite things about eating at Grandma’s house is getting to use her little baby forks.
